BEET SALAD
This salad has been proven to be reach in fiber and vitamin E as well as a healthy dose of mono –unsaturated fats which lower LDL cholesterol.
Ingredients (serves two)
- 1 medium beetroot, boiled and peeled
- 1 carrot, boiled and peeled
- 1 potato boiled and peeled
- 1 onion
- 2 tbs. fresh green peas
- ½ fresh cucumber
- 1 tbs. olive oil
- 1 tbs. balsamic vinegar
Directions:
Dice beetroot, carrot, potato, and cucumber. Finely chop and cool onion, spoon all ingredients into a bowl, sprinkle with olive oil and vinegar. Mix well
